Cooking Class: Cashew Cream Coleslaw with Savory Spiced Tempeh Bacon

Ingredients:

  • 6 cups cabbage, sliced thin
  • 1 cup carrot, shredded
  • 1/2 cup cashews
  • 1 Tbs parsley
  • 1/2 cup brown rice vinegar
  • 1 Tbs brown rice syrup
  • 1 Tbs stone ground mustard
  • sea salt
  • 1 package tempeh, sliced thin
  • 1 Tbs sesame oil
  • 1 tsp umeboshi paste
  • 1 tsp shoyu, OR tamari
  • 1 tsp chili powder

Directions:

Coleslaw

  • in a large mixing bowl combine cabbage, carrot and a few pinches salt, toss
  • in a blender combine cashews, parsley, vinegar, brown rice syrup and mustard
  • add water while blending until desired consistency
  • add a pinch of sea salt, blend
  • pour cashew cream over cabbage salad, toss
  • place tempeh bacon on top to serve

Tempeh Bacon

  • in a saute pan  over medium high heat add a small amount of sesame oil
  • add tempeh, pan fry on one side until golden brown, then flip over
  • brush tempeh with oil and spice mix
  • cook until golden brown on both sides
