Cooking Class: Nabe with Udon Noodles

Ingredients:

  • 2" kombu
  • 3 shiitake mushrooms, dried OR fresh
  • 1/2 cup cauliflower, cut in small florets
  • 1/2 cup squash, cut in small chunks
  • 1/2 cup carrot, diced small
  • 1/2 cup bell pepper, diced small
  • 2 tsp ginger, juice
  • 1/4 cup scallion, sliced thin
  • 1/4 cup parsley, sliced thin
  • 3 Tbs tamari, OR shoyu

Directions:

  •  in a large pot, add 6 cups water, kombu and shiitake mushrooms, soak for 20 min
  • remove kombu and shittake mushrooms and cut into small pieces, put back in pot
  • bring to a boil, reduce heat to low and simmer for 30 min
  • add vegetables, return to boil, cook 5 min
  • add tamari/shoyu, cook 5 min
  • remove from flame, add ginger juice, scallions and parsley
  • serve over udon noodles or rice
