Sweet Veggie Soup with Miso & Tahini

Ingredients:

  • 1 cup millet
  • 1 cup onion, diced small
  • 1 cup carrot, cut in thin quarter moons
  • 1 cup cabbage, chopped thin
  • 1 cup kabocha squash, diced small OR butternut squash
  • 1 Tbs sweet miso
  • 1 Tbs tahini

Directions:

  • in a medium size pot add millet and 8 cups water
  • over a high flame bring to a boil
  • cover, reduce flame to low, simmer 20 min
  • add onion, carrot, cabbage and squash, return to boil, simmer 20 min
  • in a small separate bowl dilute tahini and miso with some soup broth
  • add to pot, cook 5 min
